Ingredients:-
Oil:
Clarified butter:
Basmati rice: 100 gm,washed and dried
Moog dal: cleaned dry
Salt: 2-3 tbsp or as per taste
Tomato: 1 chopped
Green chili slits: 4-6
Green peas 1/2 cup
Ginger paste: 1tbsp
Carrot: 1 pc chopped
Cauliflower: 1/2 cut into florets
Potato: 2 small sizes cut in half horizontally
Turmeric powder: 1/2 tsp
Chili powder: 1 tbsp
Cumin seeds: 1 tbsp
Dry red chili: 2 nos
Cinnamon: 1/2" -2 sticks
Green cardamom: 3-4 nos
Bay leaf: 2 pieces
Sugar: 2 tsp
Take a wok heat it & dry fry Moog dal
Stir continuously otherwise Moog dal will burn out
Keep the flame high to medium
When it will be fried the color will change & immediately remove it from the heat
Moog dal is fried we will take it out
Heat the wok & add 1/2 tbsp clarified butter & heat it to melt
Add rice in it
Stir it to fry lightly
When basmati rice fried in clarified butter a sweet aroma comes out
Keep the flame medium to low
Rice is fried now we take it out
Heat the wok again & put 2-3 tbsp oil & heat
Add potato
Add cauliflower
Add carrot
Fry the veggies in oil
Close the lid to fry veggies quickly
Open the lid & stir again
The veggies are lightly fried
Now we will take it out on a separate bowl
Now in the same oil add all solid dry spices (bay leaf, dry red chili, cumin seeds, cardamom,cinnamon)
Keep the flame on medium & Saute for a while
Add ginger paste
Stir it
Add all the spice powders (turmeric &chili powder)
Mix it well
Keep the flame low
Add tomato
Mix it
Add salt
Stir till the oil separates
The spices are fried now
Add green peas now
Mix again
Reduce the flame to low
Add fried Moog dal
Mix it
Add rice which we kept fried
Mix well
Add all the fried veggies in it
Stir to mix everything
Now add 4 cups of hot water in it
Stir well
Cover it for 5 minutes
After 5 minutes open the lid
Stir
Add salt as per taste
We added 2 & 1/2 tbsp salt
Add 2 Tsp sugar
Stir again to mix well
Now we will pour the hotchpotch(khichri) inside the inner container of the rice cooker
Add green chilies
We will add 2 cups hot water
Take the water in the wok and mix well & pour that water in the container
Put the inner container in the rice cooker
This is an automatic cooker, when the khichri will be done the switch automatically goes to warm
We will then check the khichri.If it is still not cooked we will add hot water & cook again in the cooker
The hotchpotch is done
We will take it out on a plate
We will serve it with fried eggplant and fried potato & tomato chutney
